Creamy cauliflower soup, with truffle oil





















The weather has finally turned cool in Sydney, at last the brisk Autumn weather has arrived! ….. it has been so hot and humid these past few months, Summer is not my ideal season.

At last I can start to indulge in warming soups. I love soup, the idea that something so simple can taste so wonderful and yet be so quick to make that equals win/win in my book!

I had bought some cauliflower and decided that it would be a perfect evening meal  of comforting soup on such a cool and wet evening.

I cut the cauliflower into small flowerettes and added some milk and chicken stock to the saucepan with a smashed clove of garlic and a few thyme leaves.

Letting the vegetable simmer away until cooked through,  then using a hand-held blender I whizzed away until it was silky smooth, adding a dash of cream and some salt and pepper to taste.

Lastly, pour the smooth, creamy soup into a warmed bowl and drizzle with truffle oil [for that tasty extravagance!] and serve with a warm crusty bread roll with lashings of butter….. enjoy!
